You can't delete Amazon orders, but you can hide them with the archive feature. Archiving orders isn't foolproof, as anyone with access to your account can find them on the Archived Orders page.

You can delete your Amazon account via the "Close your Amazon Account" page, and that means you'll lose access to all Amazon products.
